Sugar-Free Granola with Only 6 Ingredients!

I have always loved granola and I find homemade just the best because it makes your house kitchen smell lush and you can make it exactly how you like with all the nuts, seeds and fruit – the raisin/sultanas for me are the best bit!

My first granola recipe I shared on here was a Buckwheat one, but to be totally honest, this one I am sharing with you now is 100% my go-to. The amounts are super easy to remember and I absolutely love it with homemade hemp milk! I also like it with sliced bananas and berries. Makes a great snack for on the go snack too.

Instructions
  1. Pre-heat the oven to 160C (fan).
  2. Pulse the nuts in a food processor or crush with a pistol and mortar. Place them in a mixing bowl, along with the oats.
  3. In a saucepan melt the coconut oil gently over a low heat. Take off heat then stir in the maple syrup. Pour into the mixing bowl and sure well so the nuts and oats are well coated.
  4. Place the mixture on a lined baking tray and pop into the oven for 10 minutes.
  5. After 10 minutes, stir or shake the tray so you bake it evenly. Place back in the oven for another 5 minutes.
  6. Once done take out the oven and stir in the pumpkin seeds and raisins. Allow to cool before transferring to an airtight jar or container.
