Stir fries are one of my favourite mid-week meals, especially if I haven’t got much time after work, before I’m out of the house again. Its a great way of cooking from scratch, whilst keeping it quick, easy and nutritious.
Soba noodles are made from buckwheat and used throughout Asia. They are becoming increasingly easier to find in most supermarkets now, for a reasonable price as well.
This is something I put together the other night and thought it was delicious. This recipe can easily be doubled for bigger families or for lunch the next day.
