Soba Noodle Stir Fry

Stir fries are one of my favourite mid-week meals, especially if I haven’t got much time after work, before I’m out of the house again. Its a great way of cooking from scratch, whilst keeping it quick, easy and nutritious.

Soba noodles are made from buckwheat and used throughout Asia. They are becoming increasingly easier to find in most supermarkets now, for a reasonable price as well.

This is something I put together the other night and thought it was delicious. This recipe can easily be doubled for bigger families or for lunch the next day.

Ingredients

Instructions
  1. Heat a pan of water on the stove with a pinch of salt - cook the soba noodles for 5-6 minutes then rinse under cold water
  2. With large frying pan/wok heat the sesame seed oil, adding the chopped onions and garlic. Cook for a few minutes adding a dash of water if needed
  3. Then add the couchette, red pepper, spring onion and mushrooms
  4. Once the veg has slightly softened, push to one side of the pan and crack both of the eggs the other side and scramble till they have cooked through
  5. Toss and stir everything together
  6. Now add the cooked and rinsed soba noodles, as well as the tamari and lemon juice
  7. Let it simmer till some of the juice has been absorbed, but keeping everything moisted
  8. Stir through some white sesame seeds and taste to see if it needs a dash more tamari or even sesame seed oil
  9. Serve immediately and garnish with some black sesame seeds
