Mighty Fine (Vegan) Chilli Con Carne
Chop your onion, garlic and pepper into small peices, then place in a saucepan with rapeseed oil. Fry for around 3 minutes.
Then add tinned tomatoes, vegetable stock, kidney beans, sweetcorn, tomato puree. Stir well and cook for a few minutes.
Then add lentils, cumin, paprika, oregano, black pepper and harissa paste. Simmer for 20 minutes.
Serve with brown rice, pitta bread or wraps.
