When I shared the image above on Facebook a few weeks ago, it went bonkers, and everyone wanted to know how I made it… So here it is 😀

Love love love this Vegan Chilli Con Carne, which is infused with Harrissa Paste!

So flavoursome – It is actually epic!

This dish combines really simple ingredients that are full of goodness and flavour. And the best part – it is all prepared within less that 30 minutes.

I have eaten it with brown rice, pitta bread and wraps, which all work really well.

Ingredients

Instructions
  1. Chop your onion, garlic and pepper into small peices, then place in a saucepan with rapeseed oil. Fry for around 3 minutes.
  2. Then add tinned tomatoes, vegetable stock, kidney beans, sweetcorn, tomato puree. Stir well and cook for a few minutes.
  3. Then add lentils, cumin, paprika, oregano, black pepper and harissa paste. Simmer for 20 minutes.
  4. Serve with brown rice, pitta bread or wraps.
