  1. Heat the coconut oil in a saucepan, then add the onion and leeks. (I like to add a need a dash of water too). Heat through for a few minutes.
  2. Add the sweet potato, ginger and vegetable stock, then cover with a lid for 20-25 minutes, stirring occasionally. Check the potatoes are really soft by poking with a fork before blending. When ready blend until smooth with a hand blender, blender or food processor.
  3. Garnish with cracked black pepper and coriander or parsley is you wish. Enjoy!
