Leek & Sweet Potato Soup

Here is a really simple, yet lovely soup for you to enjoy through these chilly months. It is just so creamy and warming, especially by incorporating fresh ginger which generates heat in the body. Ginger is also great for cleansing toxins, which in turn can boost immunity 🙂 So what’s not to love?

P.s. Blending soup has just got a whole lot easier after purchasing a hand blender. You may have experienced the hassle too, with transferring soup batches into your food processor or blender (not to mention all the extra washing up lol). For these reasons my hand blender is now one of my favourite kitchen appliances! 😀 So if you love soup and want to make them more easily at home from scratch, I would highly recommend getting a hand blender. It can just be a really simple one like this.

P.s.s. If you’d like to top your soup up with some protein, shelled hemp seeds and pumpkin seeds are nice sprinkled on top. And if you want a boost of healthy fats and omega 3, a tablespoon of flax oil (organic, cold-pressed) would be great.

Instructions
  1. Heat the coconut oil in a saucepan, then add the onion and leeks. (I like to add a need a dash of water too). Heat through for a few minutes.
  2. Add the sweet potato, ginger and vegetable stock, then cover with a lid for 20-25 minutes, stirring occasionally. Check the potatoes are really soft by poking with a fork before blending. When ready blend until smooth with a hand blender, blender or food processor.
  3. Garnish with cracked black pepper and coriander or parsley is you wish. Enjoy!
