Honey Nut Bars

This recipe is probably the first ‘raw’ sweet treat I ever made.

At a time when I was initially quitting refined sugar and going el naturale, my oven conveniently broke, and I was craving something sweet and comforting… but I couldn’t bake anything?

BAKE? I giggle now, because at the time something homemade and ‘sweet’ mainly revolved around a baked cake.

Little did I know you could make something so simple and delicious without much thought at all. These Honey Nut Bars sorted me right out: I would compare these little darlings to a flapjacky-granola taste!

They are moorish, sweet and chewy! But not only that, they are high in fibre and protein – so should keep you fuller for longer, with slow releasing energy.

(Also easy on your digestive system, so no bloating).

Ingredients

Instructions
  1. Pulse the almonds in a food processor so they become crushed
  2. Add the dates one at a time
  3. Using a mixing bowl add the oats and dried fruit, then add the date and nut mix from the food processor as well
  4. Now using a saucepan, gently heat the honey and nut butter till it has melted
  5. Pour this mixture into the mixing bowl with the rest
  6. Mix everything together so it forms a nice sticky ball (I used my hands for this part)
  7. Line a tin with cling film and transfer the mixture, packing it tight till it is flat
  8. Then, simply place in the freezer for 20 minutes for it to harden, or let it chill in the fridge for longer
  9. Once set, lift out of the tin and chop into bars or slices
  10. Keep in air tight container in fridge/freezer - for as long as you can keep your hands off them!
