Cashew & Maca Energy Balls

The best thing about Energy Balls is that they are incredibly easy to make and only take a few minutes.

You can also double the batch and keep some in the freezer, so when you are busy you can reach for these nourishing bites of goodness, rather than a chocolate bar or biscuits.

These energy balls are chewy, delicious and are a perfect snack for when you are feeling peckish or need an afternoon pick-me-up. I like taking them to work with me in my lunch box and to have them before or after exercise.

These no-bake energy balls combine a bunch of nutritious raw ingredients, bursting with a heap of benefits…

  • Dates and Raisins are full of vitamins and minerals, rich in fibre and contain naturally occurring sugars.
  • Cashews contain magnesium, iron, are rich in fibre and protein, and are high in antioxidants.
  • Coconut oil is classed as a superfood for its unique combination of fatty acids, which can promote better brain function.
  • Maca powder is a superfood (with an amazing caramel like smell) that is high in antioxidants and rich in vitamins B, C, and E, and packed with calcium, zinc. Maca is known for boosting energy and regulating hormones 😉

This recipe is best made using a food processor, but you can still make without. Just use a  a sharp knife to chop your dates and raisins, and use a pestle and mortar to grind the cashews. Combine all the ingredients using a large mixing bowl and then use your hands to roll into balls.

Instructions
  1. Add everything to your food processor, ensuring that all the dates have been pitted. Blend all the ingredients together, until everything is combined and the mixture is sticky.
  2. Now use your hands to evenly divide the mixture and begin to roll into balls, then coat with some crushed cashews.
  3. Place in the fridge on a plate and let them set for 40-60 mins. They can be stored in the freezer for up to a month.
