Carrot Cake Porridge

Recently I tried courgette in my porridge and really liked it and thought it’s such a good way to fit another veggie in your diet. Then when I shared it on my facebook page, one of my followers Beth told me to make carrot cake porridge, so I tried it and it’s rather nice. (Healthy too as carrots contain vitamin A, C, K, B8, iron, copper, and manganese) 😀

I have since made it the last few mornings, so thought I’d share it on here with your guys.

I find porridge so filling and it love that you can add all your nuts and seeds to make it packed with goodness.

I topped mine with maple syrup, chia and shelled hemp seeds.

Instructions
  1. Add all of the ingredients (except the maple syrup) into a saucepan and cook on a medium heat for roughly 5 minutes or until you have created a the porridge consistency you like.
  2. Take off heat and serve in a bowl. Top with maple syrup, fruit, nuts and seeds. Enjoy.
