Carrot and Coriander Soup

I love this recipe! I got it from my Mum and really wanted to share it on here as it’s such a creamy delicious soup, that utilises nutritious and inexpensive ingredients.

It is so straightforward and quick to make, making it perfect for those pushed for time but want a healthy way to satisfy their hunger.

The quantity listed below makes 2 large portions (which would stretch to 4 starter portions), but feel free to double the ingredients to make more. You will just have to use your blender twice and then mix everything in a large bowl to even it out.

Instructions
  1. Place the lentils in a saucepan on medium heat with the 300 mls hot water and bay leaf.
  2. With another saucepan add the chopped carrots, 450ml hot water, 150ml orange juice and Bouillon powder.
  3. Reduce heat slightly on the lentils to simmer. Cook both for roughly 20 mins.
  4. Once the carrots are tender, drain the lentils if necessary and discard bay leaf. Now add everything to a blender with the coriander, salt and pepper.
  5. Blend till smooth. Severe immediately or store in an airtight container in the fridge. Will last a couple of days.
