For those lazy evenings when you just want something comforting to fill you up and keep you nourished, here is a quick and easy recipe for home-made baked beans.
Baked beans are a staple food in most British homes (they were in mine growing up anyway). However, a traditional tin of Heinz (for example) actually has a high sugar and salt content because it’s been added, which isn’t great for our health.
… But we need beans! We need beans for beans on toast, jacket potato and beans, pizza and beans and chips and beans (pictured below – awesome by the way!). Everyone has their own beloved combination and now were heading into winter it’s all you want right?
Beans are packed with protein, iron, B vitamins and fibre, so along with the tomatoes your filling up on all the good stuff and they count towards your 5 a day.
To cook the chips I sliced up 1 large white potato and placed on a lined tray. Then I drizzled 1 tablespoon rapeseed oil, with 1 teaspoon coconut oil and sprinkled with rosemary, cracked pepper and pink Himalayan salt. I then popped them in the oven at 180C for 30-35 minutes, tossing a few times so they were evenly cooked and nice and crispy.
