These pancakes are fluffy, light and nutritious. This is the easiest and most tastiest breakfast-dessert ever. No measuring, no weighing – just blending! This recipe will serve one person a beautiful stack of pancakes. Just double for more people.

Instructions
  1. Pop all the ingredients (apart from the coconut oil) into a blender or NutriBullet. (You can always mash up the banana with a fork and stir the rest in. This will give your pancakes more texture too.)
  2. Heat half the coconut oil in a large frying pan.
  3. Evenly pour enough pancake mix into the pan to make two separate small pancakes. (I'd keep them small as they can easily break when you try and flip them).
  4. Once cooked both sides, plate up and heat the rest of the coconut oil for the next batch.
  5. Now, stack them on top of each other and add some delicious toppings - like nut butter, berries and honey.
Recipe Notes

I put almond butter in between mine and topped with some strawberries and pure Canadian maple syrup.
