Balsmic Avocado on Toast

Avocado on toast is on of my favourite snacks because it is super healthy, tastes great and is so easy to put together.

Avocados are an incredible superfood that are packed with antioxidants, heart-healthy monounsaturated fatty acids and fibre. Fatty acids are particularly good for our skin as they soften skin cells and contain vitamin C and E, which can help clear skin and prevent wrinkles. Make sure your avocado is ripe before cutting into it, otherwise it will be really hard to mash.

I like to use rye bread as a substitute for traditional wheat bread, as it contains a smaller amount of gluten which makes it easier to digest and is higher in fibre. High fibre foods help you feeling fuller for longer and also slow the absorption of glucose, which helps to regulate blood sugar levels.

Instructions
  1. Firstly pop your rye bread in the toaster.
  2. Mash your avocado (I find it easiest on a plate using a fork), then add your balsamic vinegar and some cracked black pepper.
  3. Spread your avocado mix onto your toast and top with rocket, chopped sun-dried tomatoes and lime juice.
