So, I don’t know about you, but I tend to eat granola out the jar!
I just love it as it is and i’ve definitely been enjoying this one.
Almond pulp is the by-product after making almond milk. It is a wonderfully nutritious ingredient that should never go to waste! It is very versatile and can be used similar to ground almonds. You can use it to make crackers, cookies and macaroons.
But today i’m going to show you how to make Almond Pulp Granola, as it is so easy to mix in a bowl, lay on a baking tray and pop in the oven 🙂
The amount of almond pulp used in this recipe is from what was left from my >> Homemade Almond Milk <<
Feel free to substitute the seeds for others that you may have or prefer, like flax or chia.
Pre-heat the oven at 150C (fan) and line a baking tray with greaseproof paper or tinfoil.
Add all the ingredients (except form raisins/saltans) to a large mixing bowl and mix everything together with a spoon or with your hands. Make sure everything is nicely coated.
Pour onto baking tray and make sure there are some air holes in between, so that not everything is touching. Place your tray in the middle of the oven for 25-30 minutes. Check at 20 minutes to give it a stir and make sure the edges don't burn.
Take out of the oven and leave to completely cool. This allows it to further crisp up as well. Store in an airtight jar at room temperature for up to 2 weeks.
